fix(steamdeck, steammachine): opt out of the NixOS half of gaming.desktop

`gaming.desktop` is defined twice: once in the NixOS class of the gaming
aspect and once in the Home Manager class. They are independent module
namespaces, so setting the flag in home.nix had no effect on the NixOS
side.

The result was that both Jovian hosts still installed the desktop Steam
extras that Jovian already provides:

- programs.gamemode (enable and enableRenice)
- the 8BitDo services.udev.extraRules
- steamtinkerlaunch, yad and gamescope-wsi in environment.systemPackages

programs.gamescope.enable = lib.mkForce false was the only thing keeping
the NixOS gamescope module off, which masked the problem.

Sets gaming.desktop = false next to gaming.enable = true in both
configuration.nix files, and documents that the two classes do not share
values so the next reader does not repeat the mistake.

Also corrects the Steam Deck home.nix header, which still claimed Vesktop,
Heroic, UMU, protontricks and Hydra come from the gaming module.
