fix(steammachine): expose Proton GE to Gaming Mode

The Jovian gamescope launcher bypasses the NixOS Steam wrapper, so extraCompatPackages were installed but STEAM_EXTRA_COMPAT_TOOLS_PATHS never reached Gaming Mode. Pass the declared compatibility tools through jovian.steam.environment, retaining the steamcompattool output and its closure reference. Both sessions run as ammar; this is launcher environment wiring, not a different user.
