Pin ffmpeg to 8.1.1

Use Nixhub's latest ffmpeg package reference to pin ffmpeg-nixpkgs to the nixpkgs commit that provides ffmpeg 8.1.1. Print the ffmpeg version in the dev shell hook so the pinned version is visible when entering the shell.
