Simplify Litestream configuration (#349)

Litestream 0.5.11 reads LITESTREAM_ACCESS_KEY_ID and
LITESTREAM_SECRET_ACCESS_KEY directly from the environment, so expanding
those variables into the config duplicated its credential discovery
mechanism. The deployment and maintenance scripts already export both
variables.

The configured Backblaze B2 endpoint is automatically detected by
Litestream 0.5.11, which enables path-style S3 addressing. Keeping
force-path-style explicitly set therefore provides no additional
behavior.

Retain the replica location, sync policy, validation policy, snapshot
retention, and restore-if-db-not-exists configuration. These settings
express this application's backup and recovery requirements.
