Replace `attrs` type with `attrsOf anything` (#242)

`attrs` doesn’t recursively merge, which has caused no end of pain.
Thankfully `attrsOf anything` does, so it’s a simple fix. Also see
https://nixos.org/manual/nixos/stable/#sec-option-types-basic re:
`attrs` getting deprecated.
