Fix `--dry-run` behavior (#202)

`pm_setVerboseAndDryRun` tries to export arrays, but that’s not
supported by Bash. So, instead, we now set those vars in each script.

The worst consequence of this is that `--dry-run` sometimes behaved as a
real run, creating & deleting files.
