Migrate Go module to GitLab v3

Move ScreenJournal's public repository references and Go module path from
github.com/mtlynch/screenjournal/v2 to
gitlab.com/mtlynch/screenjournal/v3. This is a breaking import-path change
for downstream Go consumers.

Use OS-assigned ports for E2E app servers to avoid a parallel test race where
a released port could be claimed by a TMDB mock server.
