Use Stapelberg's Go VCS stamping overlay

Replace the local fake git implementation with the upstream goVcsStamping overlay from github:stapelberg/nix.

Use the flake source as the Go package src so the overlay can read rev, dirtyRev, and lastModified metadata directly.
