docs: build the notebook host wheel against the vendored workspace The docs check builds examples/notebooks/symbolica-host with `maturin build --offline --locked --profile ci-optim`. That build could not succeed on feynkit: - The docs profile moved to ci-optim (ae45d231f), but the host still only defined `docs`. - The host lock had drifted from the workspace lock that Nix vendors (Symbolica bbc2d73 instead of c78cffc, symjit 2.26, crossterm 0.28, ...). - The host lacked the workspace's vendored Clarabel patch, so it resolved registry Clarabel 0.11.1, which is not vendored. Rename the profile, mirror the Clarabel patch, and regenerate the host lock from the workspace lock. Every locked registry and git package is now in the vendored workspace lock.
